Watermelon Gazpacho

For the crazy October heat, this is amazing, fresh and a super dish to have before your meal. This is a great mix of sweet, sour and salty but in a completely refreshing way.



This is for 2 people:
1/2 a cucumber, chopped
1/2 an onion finely chopped
a piece of celery as big as your finger, finely chopped
2 teaspoons parsley finely chopped
2 tsp lemon juice
2 cups de-seeded watermelon chunks whizzed up in a blender and then strained
1/2 cup cranberry juice
A pinch of salt
A few sprigs of mint to garnish

Mix together the watermelon juice and the cranberry juice
Mix all the chopped veggies into a bowl and put that in the fridge too

take out and mix just before serving so that everything is nice and chilled
