I love these mushrooms at Indigo Deli and thought I'd try and replicate them at home with some really good results!! the mushrooms were tasty, tangy, soft with a hint of spice, plus this was super easy to make and literally takes 5 minutes to make
Ingredients
500 gm mushrooms
2 tbsp balsamic vinegar
1/2 tsp lime juice (the vinegar is already sour so don't put more)
1 tsp paprika powder
1/2 tsp salt (or to taste)
1 tsp olive oil
1 clove garlic (optional) chopped fine
I've put the garlic as an optional because it tastes as good with or without the garlic. Plus, if you want to serve it to a small family dinner it's fine if everyone has garlic, but if you want to serve it at a party, I'd say avoid the garlic. It's very important to use virgin olive oil as the smoking point is higher and is better to use when sauteƩing.

Method
- Clean out the mushrooms and marinate them for around 15 minutes in balsamic vinegar, salt, lime juice and paprika powder
- Take a non stick pan and add the olive oil, garlic and sauteƩ for a while
- Add your marinated mushroom to the pan and count exactly 5 minutes on your timer stirring the mushrooms around
- Take out and serve immediately
- I like to stick toothpicks in this as well and serve it with a sprig of parsley or a nice huge red chili split in half or both to bring some colour and drama to the dish
